what to do during a blackout? fry chicken, duh.

i was working on a quarterly report to a federal government agency when the blackout occurred, and it did not make me happy when my screen promptly shut off as i was writing one of my final sentences.  lesson learned: press SAVE a lot more.


aside from my quarterly report catastrophe, the rest of the day went wonderfully.  i enjoyed the blackout: i met my neighbors, had good conversations, and thanks to a gas stove, got to cook!


i cooked some rice in a pot, and decided to fry up some chicken.  i applied a simple dry rub of salt, pepper, paprika and chili powder to chicken thighs, and pan-fried them in the only frying oil i could find: coconut oil.  loading up on lauric acid for the win.
