my first post! oh, the excitement within me is, well...exciting.
what better way to start this blog than with SPAM! my lovely co-worker erica found the spam in our pantry, and began craving the spam/potato/egg/homemade tortilla meal of her grandmother. after a phone call to mom for ingredient measurements, we were off!
we didn't have any white flour (we are a health center, after all ^_^), so we used whole wheat flour for the tortilla dough. the low-sodium spam was cut thin to ensure delicious crispiness.
while erica was working on the dough and spam, i got started with the potatoes. nothing fancy, just cubed red potatoes sautéed in extra virgin olive oil with some salt, pepper and parsley (the addition of the latter wasn't "rez style," so erica deemed these potatoes "urban style").
after the potatoes came the tortillas. after the dough rested for about 15 minutes, erica rolled it out and divided it up for tortilla formulation. see above for my special tortilla versus her more refined example.
eggs were fried and spam crisped while the tortillas finished on our skillet-turned-comal.
the tortillas ended up coming out wonderfully. we didn't have rolling pins (they would've been cheating, anyways), so the resulting rounds were a bit thick, and since we used whole wheat flour (and kneaded a little bit over), the tortillas were a little more chewy than your typical white flour tortilla. regardless, the quasi-healthy (ok, not really...) wrap emerged. enjoy with hot sauce and share with coworkers.
spam wraps with whole wheat flour tortillas (yields 6)
tortilla:
2 cups whole wheat flour
1 tsp baking powder
1 tsp salt
~1 cup water
potatoes:
~6 medium red potatoes
~2 tbsp extra virgin olive oil
salt, pepper, and parsley to taste
1 can low sodium SPAM
eggs
-combine dry ingredients for tortillas. slowly incorporate water and mix. knead until smooth; cover and set aside.
-cube potatoes and sauté in olive oil on medium high heat with salt, pepper and parsley in a large skillet. cook until potatoes are at desired softness. cover and set aside.
-divide dough into 6 even balls and hand-pat tortillas. no need for a rolling pin or oiled hands; the tortillas will be slightly thick.
-cook each tortilla in the skillet. cover and set aside.
-thinly cut SPAM and sauté in the same skillet.
-cook eggs however you desire (we fried them, because we wanted to).
-evenly divide ingredients onto each of the tortillas. wrap with foil and serve.
